Fez is probably the most fascinating city in Morocco. While Marrakech has adapted to mass tourism, Fez preserves its medieval character absolutely intact. The Fes el-Bali medina, continuously inhabited since the 9th century, is the largest medieval urban settlement in the world.

Walking through its 9,000 car-free alleys is like stepping back 700 years: craftsmen using the same techniques as their grandfathers, mosques where the adhan resonates five times daily, spices perfuming the air, and the sound of blacksmiths' hammers.

Fascinating fact: Al-Quaraouiyine University, founded in 859 AD by Fatima al-Fihri — a woman — is recognised by the Guinness World Records as the world's oldest continuously operating university.
